Absolutely! This recipe makes about 60 cookies which is an enormous amount so I totally get the need to cut it down. To do so just halve all the ingredient amounts and follow the same order of directions.
Was the shortening supposed to be half LB? I followed the recipe using 1/2lb but my cookies totally flattened out like a lace cookie. I attempted both smaller balls, larger, flattening with the spoon and leaving round. No matter what I did they baked at 350 to a flat disc. I am an avid baker; so I was extremely disappointed. No one else had this issue?

Let cool completely before transferring to a plate. Enjoy! Notes Make sure marshmallows are in the center of the cookie so they bake into the cookie. If they are on the edge of the cookie, the marshmallow is most likely ooze out which is not a big deal, just doesn't make for a "pretty" cookie. Your molasses crinkles are just like the ones I have been making for quite some time except that I use canola oil in place of the butter. My original recipe called for Crisco and I did not want hydrogenated shortening so had to do some trial and error to get the right amount of oil. I also use half whole wheat flour. My cookies might be a slight bit crisper than the original cookies but just as good.

I am a novice at this keto baking thing, but these cookies turned out fabulous. I was pleasantly surprised at the taste and texture. I did add 1/4 tsp of xanthum gum and 1 tsp of baking powder.
